Homemade Atta Noodles & Street Style Hakka Noodles

- Homemade Atta Noodles:
Ingredients:
- 2 cups whole wheat flour (atta)
- 1 teaspoon salt
- Water, as needed
Instructions:
- In a large mixing bowl, combine the whole wheat flour and salt.
- Slowly add water, a little at a time, and knead the dough until it comes together. The dough should be firm and smooth.
- Divide the dough into small portions and roll each portion into a thin sheet using a rolling pin.
- Dust the rolled sheet with flour to prevent sticking and fold it into a cylinder shape.
- Cut the cylinder into thin noodle strips using a sharp knife.
- Carefully separate the noodles and lightly dust them with flour to prevent sticking.
- Bring a pot of water to boil and cook the noodles for about 3-4 minutes or until they are tender.
- Drain the cooked noodles and use them in your favorite noodle recipes.
- Street Style Hakka Noodles:
Ingredients:
- 8 ounces (225g) Hakka noodles or any thin noodles
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 medium onion, thinly sliced
- 1 cup mixed vegetables (carrots, bell peppers, cabbage, etc.), thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce (adjust to your spice preference)
- 1 tablespoon vinegar
- 1 teaspoon sugar
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped green onions, for garnish
Instructions:
- Cook the Hakka noodles according to the package instructions until they are al dente. Drain and rinse them under cold water to stop the cooking process. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger to the skillet and sauté for about 30 seconds until fragrant.
- Add thinly sliced onions and cook until they turn translucent.
- Add the mixed vegetables and stir-fry for a few minutes until they are slightly tender but still crisp.
- In a small bowl, mix together soy sauce, chili sauce, vinegar, sugar, salt, and black pepper.
- Add the cooked noodles to the skillet and pour the sauce mixture over them. Toss everything together to coat the noodles and vegetables evenly.
- Continue to stir-fry the noodles for a few minutes until they are heated through and well combined with the sauce.
- Remove from heat and garnish with chopped green onions.
- Serve the Street Style Hakka Noodles hot as a main course or a side dish.
