Instructions:

  1. Heat the oil or ghee in a large pan or skillet over medium heat. Add the chopped onion and sauté until it becomes golden brown.
  2. Add the minced garlic and grated ginger to the pan and sauté for an additional minute until fragrant.
  3. In a small bowl, combine the ground coriander, ground cumin, turmeric powder, red chili powder, and garam masala. Mix well to make a spice blend.
  4. Add the spice blend to the pan and stir it into the onion mixture, allowing the spices to toast for a minute.
  5. Add the chicken pieces to the pan and cook until they are lightly browned on all sides.
  6. Reduce the heat to low and add the coconut milk to the pan. Stir well to combine the coconut milk with the spices and chicken.
  7. Cover the pan and simmer for about 15-20 minutes, or until the chicken is cooked through and tender.
  8. In a separate bowl, whisk the plain yogurt until smooth. Gradually add the whisked yogurt to the pan, stirring continuously to incorporate it into the sauce.
  9. Season with salt to taste and simmer for an additional 5 minutes to allow the flavors to meld together.
  10. Remove the pan from heat and garnish with fresh cilantro leaves.
