Fluffy dough stuffed with spinach and feta
INGREDIENTS
- 210ml (3/4 cup) of milk
- 210ml (3/4 cup) of water
- 130ml (1/2 cup) of vegetable oil
- 15g (1 1/4 tbsp) of sugar
- 10g of dry yeast
- 650g (4 3/4 cups) of flour
- 6g (1 tsp) of salt
- Spinach (sauteed)
- Feta cheese
- 1 egg yolk
- Poppy seeds
METHOD
1. In a bowl add the milk, water, oil, sugar, and yeast and mix until the yeast dissolves. Add the flour and salt and continue mixing. When the dough starts to form knead it with your hands to obtain smooth dough.
2. Transfer the dough to the baking dish and cover it with cling film. Fill the pot with hot water and place the dough over the pot. Let it rise for 1 hour.
3. After time has elapsed transfer the dough to the working surface and split it into 12 pieces. Form the balls.
4. Roll out each ball and press it with the skewer stick. Flip it over and arrange the spinach and feta cheese. Make the specific shape by pressing it with your fingers to seal it well.
5. Transfer them to the baking tray covered with parchment paper. Cover with a cloth and let them rest for 15 minutes.
6. After 15 minutes brush them with the egg yolk and sprinkle the bottom part with the poppy seeds.
7. Transfer them to the oven and bake at 180°C/360°F for 30 minutes, or until they are golden.
