Aloo Paratha

Aloo Paratha is a popular Indian flatbread stuffed with a spiced potato filling. It is a delicious and filling dish that can be enjoyed for breakfast, lunch, or dinner.

Ingredients for the Dough:

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • Water, as needed

Ingredients for the Potato Filling:

  • 2 large potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped (adjust to taste)
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt, to taste
  • Fresh coriander leaves, chopped (optional)
  • Ghee or oil, for cooking

Instructions:

  1. In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a soft and pliable dough. Cover the dough and let it rest for about 15-20 minutes.
  2. In the meantime, prepare the potato filling. In a mixing bowl, combine the mashed potatoes, chopped onion, green chilies, grated ginger, cumin seeds, turmeric powder, red chili powder, garam masala, salt, and fresh coriander leaves (if using). Mix well until all the ingredients are combined.
  3. Divide the dough into equal-sized portions and roll each portion into a ball.
  4. Take one dough ball and dust it with flour. Roll it out into a small circle, about 4-5 inches in diameter.
  5. Place a spoonful of the potato filling in the center of the rolled-out dough circle.
  6. Bring the edges of the dough together and seal the filling inside, forming a ball.
  7. Gently flatten the filled dough ball with your hands and dust it with flour.
  8. Roll out the flattened dough ball into a larger circle, about 6-7 inches in diameter. Be careful not to apply too much pressure, as it may cause the filling to come out.
  9. Heat a tawa or griddle over medium heat. Place the rolled-out paratha on the hot tawa and cook for about a minute, or until you see bubbles forming on the surface.
  10. Flip the paratha and spread some ghee or oil on the cooked side. Cook for another minute.
  11. Flip the paratha again and spread ghee or oil on the other side. Press down gently with a spatula to ensure even cooking.
  12. Cook the paratha for a couple more minutes, flipping as needed, until it is golden brown and crispy on both sides.
  13. Remove the cooked paratha from the tawa and keep it warm. Repeat the process with the remaining dough balls and potato filling.
  14. Serve the Aloo Parathas hot with yogurt, pickle, or any chutney of your choice.
