Veggie Tapa

Veggie tapa is a vegetarian version of the popular Spanish dish called "tapa" which typically consists of small savory bites or appetizers. While tapa traditionally includes meat or seafood, a veggie tapa focuses on using plant-based ingredients to create a flavorful and satisfying dish.

Ingredients:

  • 1 block of firm tofu, drained and pressed
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup or honey (for sweetness)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro (optional, for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut the tofu into small, bite-sized cubes or rectangular pieces.
  3. In a bowl, whisk together the soy sauce, olive oil, maple syrup or honey, smoked paprika, garlic powder, cumin, salt, and pepper.
  4. Add the tofu pieces to the bowl and gently toss to coat them in the marinade. Allow the tofu to marinate for at least 15 minutes to absorb the flavors.
  5. Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  6. Arrange the marinated tofu pieces in a single layer on the baking sheet.
  7. Bake the tofu in the preheated oven for about 20-25 minutes, or until they are lightly browned and crispy on the outside.
  8. Remove the tofu from the oven and let it cool for a few minutes.
  9. Transfer the veggie tapa to a serving plate and garnish with fresh parsley or cilantro if desired.
  10. Serve the veggie tapa as an appetizer or snack. It can be enjoyed on its own or paired with dipping sauces like garlic aioli or tomato salsa.
