Crispy Chicken with Lemon Leek Sauce

Crispy chicken with lemon leek sauce is a delicious and flavorful dish that combines tender chicken with a tangy and creamy sauce.

Ingredients for the crispy chicken:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Ingredients for the lemon leek sauce:

  • 2 leeks, washed and thinly sliced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Season the chicken breasts with salt and pepper.
  3. In three separate bowls, set up a breading station. In the first bowl, combine the flour, salt, and black pepper. In the second bowl, place the beaten eggs. In the third bowl, place the breadcrumbs.
  4. Dip each chicken breast into the flour mixture, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it in the breadcrumbs, pressing gently to adhere.
  5. Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken breasts for about 3-4 minutes on each side until golden brown.
  6. Transfer the partially cooked chicken breasts to a baking sheet and finish cooking them in the preheated oven for about 15-20 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. While the chicken is baking, prepare the lemon leek sauce. In a separate skillet, melt the butter over medium heat.
  8. Add the sliced leeks and minced garlic to the skillet and sauté for about 5 minutes until the leeks become tender.
  9. Pour in the chicken broth, heavy cream, lemon zest, and lemon juice. Bring the mixture to a simmer and cook for about 5 minutes until the sauce slightly thickens.
  10. Season the sauce with salt and pepper to taste.
  11. Remove the chicken breasts from the oven and let them rest for a few minutes.
  12. Serve the crispy chicken with the lemon leek sauce poured over the top.
  13. Garnish with chopped fresh parsley.
