Rice With Blackbean Sauce
Rice with black bean sauce is a delicious and flavorful dish that combines fluffy steamed rice with a savory black bean sauce.
Ingredients:
- 1 cup long-grain white rice
- 2 cups water
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup cooked black beans
- 2 tablespoons black bean sauce
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon chili flakes (optional)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions:
- Rinse the rice under cold water until the water runs clear. Drain well.
- In a medium-sized saucepan, combine the rinsed rice and water. Bring to a boil over high heat.
- Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for about 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- While the rice is cooking, heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced onion and minced garlic to the skillet and sauté for a few minutes until they become translucent.
- Add the diced red and green bell peppers to the skillet and continue to cook for another 3-4 minutes until they are slightly softened.
- Stir in the cooked black beans, black bean sauce, soy sauce, rice vinegar, sugar, and chili flakes (if using). Mix well to combine all the ingredients.
- Reduce the heat to low and simmer the black bean sauce for about 5 minutes, stirring occasionally, to allow the flavors to meld together. Season with salt and pepper to taste.
- Serve the rice with the black bean sauce spooned over the top. Garnish with chopped green onions.
