Spicy Soft Tofu Stew with Seafood

Spicy Soft Tofu Stew with Seafood, also known as Sundubu Jjigae, is a popular Korean dish that features a flavorful and spicy broth, soft tofu, and an assortment of seafood.

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 1 cup mixed seafood (such as shrimp, squid, and clams)
  • 1 cup sliced mushrooms (such as shiitake or oyster mushrooms)
  • 2 cups seafood or vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang (Korean red pepper paste)
  • 1 teaspoon sesame oil
  • 1 package (about 14 ounces) soft tofu, cut into cubes
  • 2 green onions, sliced (both white and green parts)
  • Salt and pepper to taste
  • Optional toppings: sliced green chili peppers, sliced kimchi, chopped cilantro

Instructions:

  1. Heat the vegetable oil in a large pot or a deep skillet over medium heat.
  2. Add the sliced onion and minced garlic to the pot and sauté for a few minutes until they become fragrant and slightly softened.
  3. Stir in the gochugaru (Korean red pepper flakes) and sauté for another minute to release its flavors.
  4. Add the mixed seafood and sliced mushrooms to the pot and cook for a few minutes until the seafood is partially cooked.
  5. Pour in the seafood or vegetable broth and bring it to a simmer.
  6. Stir in the soy sauce, gochujang (Korean red pepper paste), and sesame oil. Mix well to dissolve the gochujang and incorporate the flavors.
  7. Gently add the cubed soft tofu to the pot, being careful not to break it apart. Let it simmer for about 5-7 minutes to allow the flavors to infuse into the tofu.
  8. Add the sliced green onions to the stew and season with salt and pepper to taste. Simmer for an additional minute.
  9. Remove from heat and serve the spicy soft tofu stew in individual bowls. Garnish with optional toppings like sliced green chili peppers, sliced kimchi, or chopped cilantro for added flavor and freshness.
