Chorizo and Eggs: A Delicious Twist on the Classic Breakfast
Chorizo and eggs is indeed a delicious twist on the classic breakfast! The combination of spicy chorizo sausage and fluffy scrambled or fried eggs creates a flavorful and satisfying meal.
Ingredients:
- 4 ounces (113 grams) of chorizo sausage, casings removed
- 4 large eggs
- 1 tablespoon of olive oil or butter
- Salt and pepper to taste
- Optional toppings: chopped cilantro, diced tomatoes, shredded cheese, sliced avocado
Instructions:
- Heat a skillet or frying pan over medium heat and add the chorizo sausage. Break it up with a spatula and cook until browned and crispy, about 5-7 minutes. Remove the cooked chorizo from the pan and set it aside, leaving any rendered fat in the pan.
- In a mixing bowl, whisk the eggs until well beaten. Season with salt and pepper according to your taste preferences.
- Return the skillet to the stove and add olive oil or butter. Heat over medium heat until the fat is melted and hot.
- Pour the beaten eggs into the skillet and let them cook undisturbed for a minute or two until they start to set around the edges.
- Using a spatula, gently push the cooked edges toward the center, allowing the uncooked eggs to flow to the edges. Continue doing this until the eggs are mostly cooked but still slightly runny.
- Add the cooked chorizo back into the skillet with the eggs. Stir gently to combine the chorizo and eggs, allowing the residual heat to finish cooking the eggs.
- Cook for another minute or so until the eggs are fully set and cooked to your desired consistency. Be careful not to overcook them, as they can become dry.
- Remove the skillet from the heat and transfer the chorizo and eggs to serving plates. Garnish with your preferred toppings, such as chopped cilantro, diced tomatoes, shredded cheese, or sliced avocado.
- Serve the chorizo and eggs hot and enjoy this delicious twist on a classic breakfast!
You can also serve chorizo and eggs with warm tortillas, toast, or as a filling for breakfast burritos. Feel free to adjust the seasonings and add your favorite ingredients to make it your own. Enjoy!
