White Chocolate Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 6 ounces white chocolate, chopped
  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium saucepan, combine the heavy cream and milk. Heat the mixture over medium heat until it reaches a gentle simmer. Remove it from the heat.
  2. In a separate bowl, whisk together the sugar and egg yolks until well combined.
  3. Slowly pour a small amount of the hot cream mixture into the egg mixture, whisking constantly. This helps temper the eggs and prevent them from curdling. Gradually pour in the remaining hot cream mixture while whisking continuously.
  4. Pour the combined mixture back into the saucepan and return it to the stove over low heat. Cook the mixture, stirring constantly, until it thickens slightly and coats the back of a spoon. This usually takes about 5-7 minutes. Do not let it boil.
  5. Remove the saucepan from the heat and add the chopped white chocolate. Stir until the white chocolate is completely melted and the mixture is smooth.
  6. Stir in the vanilla extract.
  7. Place a fine-mesh sieve over a bowl and strain the mixture to remove any lumps or cooked egg bits.
  8. Cover the bowl and refrigerate the mixture for at least 4 hours or overnight to chill it thoroughly.
  9. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. This typically takes about 20-25 minutes until the mixture thickens to a soft-serve consistency.
  10. Transfer the churned ice cream into an airtight container. Press a piece of plastic wrap directly onto the surface of the ice cream to prevent ice crystals from forming. Seal the container and freeze it for at least 4 hours or until the ice cream hardens.
  11. Once the white chocolate ice cream is fully frozen, it's ready to be served. Scoop it into bowls or cones and enjoy its creamy, white chocolate goodness.
