Egg Curry
Egg curry is a delicious and versatile dish that can be enjoyed as a main course with rice or bread. It features hard-boiled eggs simmered in a flavorful and aromatic curry sauce.
Ingredients:
- 6 hard-boiled eggs, peeled
- 2 tablespoons oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, pureed or finely chopped
- 2 teaspoons curry powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 cup coconut milk (optional, for a creamier curry)
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions:
- Heat oil in a large pan or skillet over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the minced garlic and grated ginger to the pan. Sauté for another minute until fragrant.
- Add the pureed or finely chopped tomatoes to the pan and cook for a few minutes until they soften and release their juices.
- Stir in the curry powder, turmeric powder, ground cumin, ground coriander, and red chili powder. Cook the spices with the tomato mixture for a minute to allow the flavors to meld.
- If using coconut milk, add it to the pan and stir well to combine. Coconut milk adds richness and creaminess to the curry. If you prefer a lighter curry, you can omit it.
- Gently place the hard-boiled eggs into the curry sauce, ensuring they are coated with the sauce. Reduce the heat to low, cover the pan, and simmer for about 10-15 minutes to allow the flavors to infuse into the eggs. Stir occasionally to prevent sticking.
- Taste the curry and season with salt according to your preference.
- Once the eggs are heated through and the flavors have melded, turn off the heat.
- Transfer the egg curry to a serving dish and garnish with fresh cilantro leaves.
- Serve the egg curry hot with steamed rice, naan bread, or any bread of your choice.
