Egg Curry

Egg curry is a delicious and versatile dish that can be enjoyed as a main course with rice or bread. It features hard-boiled eggs simmered in a flavorful and aromatic curry sauce.

Ingredients:

  • 6 hard-boiled eggs, peeled
  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, pureed or finely chopped
  • 2 teaspoons curry powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 cup coconut milk (optional, for a creamier curry)
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions:

  1. Heat oil in a large pan or skillet over medium heat. Add the chopped onions and sauté until they turn golden brown.
  2. Add the minced garlic and grated ginger to the pan. Sauté for another minute until fragrant.
  3. Add the pureed or finely chopped tomatoes to the pan and cook for a few minutes until they soften and release their juices.
  4. Stir in the curry powder, turmeric powder, ground cumin, ground coriander, and red chili powder. Cook the spices with the tomato mixture for a minute to allow the flavors to meld.
  5. If using coconut milk, add it to the pan and stir well to combine. Coconut milk adds richness and creaminess to the curry. If you prefer a lighter curry, you can omit it.
  6. Gently place the hard-boiled eggs into the curry sauce, ensuring they are coated with the sauce. Reduce the heat to low, cover the pan, and simmer for about 10-15 minutes to allow the flavors to infuse into the eggs. Stir occasionally to prevent sticking.
  7. Taste the curry and season with salt according to your preference.
  8. Once the eggs are heated through and the flavors have melded, turn off the heat.
  9. Transfer the egg curry to a serving dish and garnish with fresh cilantro leaves.
  10. Serve the egg curry hot with steamed rice, naan bread, or any bread of your choice.
