Strawberry Cups

Strawberry Cups are delicious and refreshing individual desserts made with layers of crushed biscuits, strawberry puree, and whipped cream.

Ingredients:

  • 150g digestive biscuits
  • 30g butter, melted
  • 350g strawberries
  • 50g (1/4 cup) sugar
  • 300g (1 1/4 cups) whipping cream
  • Vanilla extract

Instructions:

  1. Crush the digestive biscuits either by placing them in a plastic bag and crushing them with a rolling pin or by using a food processor. Transfer the crushed biscuits to a bowl.
  2. Pour the melted butter over the crushed biscuits and mix well until the butter is evenly distributed.
  3. In a separate bowl, add the strawberries and sugar. Using an immersion blender or a regular blender, puree the strawberries until smooth.
  4. In another bowl, pour the whipping cream and add sugar and a splash of vanilla extract. Using an electric mixer, whip the cream until it reaches stiff peaks.
  5. Assemble the Strawberry Cups: Take individual serving glasses or cups and add a few tablespoons of the biscuit base to each glass as the first layer. Press it down gently to create a solid base.
  6. Next, add a layer of the strawberry puree on top of the biscuit base. Spoon it carefully to ensure even distribution among the cups.
  7. Transfer the whipped cream to a piping bag or use a spoon to add a layer of whipped cream on top of the strawberry layer.
  8. Optionally, garnish each cup with a small piece of strawberry for decoration.
  9. Place the Strawberry Cups in the refrigerator for at least 1 hour to allow the flavors to meld and the dessert to set.
  10. Serve chilled and enjoy the delightful combination of sweet biscuit base, fresh strawberry puree, and creamy whipped cream in each Strawberry Cup.
