Strawberry Cups

Strawberry Cups are delicious and refreshing individual desserts made with layers of crushed biscuits, strawberry puree, and whipped cream.
Ingredients:
- 150g digestive biscuits
- 30g butter, melted
- 350g strawberries
- 50g (1/4 cup) sugar
- 300g (1 1/4 cups) whipping cream
- Vanilla extract
Instructions:
- Crush the digestive biscuits either by placing them in a plastic bag and crushing them with a rolling pin or by using a food processor. Transfer the crushed biscuits to a bowl.
- Pour the melted butter over the crushed biscuits and mix well until the butter is evenly distributed.
- In a separate bowl, add the strawberries and sugar. Using an immersion blender or a regular blender, puree the strawberries until smooth.
- In another bowl, pour the whipping cream and add sugar and a splash of vanilla extract. Using an electric mixer, whip the cream until it reaches stiff peaks.
- Assemble the Strawberry Cups: Take individual serving glasses or cups and add a few tablespoons of the biscuit base to each glass as the first layer. Press it down gently to create a solid base.
- Next, add a layer of the strawberry puree on top of the biscuit base. Spoon it carefully to ensure even distribution among the cups.
- Transfer the whipped cream to a piping bag or use a spoon to add a layer of whipped cream on top of the strawberry layer.
- Optionally, garnish each cup with a small piece of strawberry for decoration.
- Place the Strawberry Cups in the refrigerator for at least 1 hour to allow the flavors to meld and the dessert to set.
- Serve chilled and enjoy the delightful combination of sweet biscuit base, fresh strawberry puree, and creamy whipped cream in each Strawberry Cup.
