Octopus Pasta
Octopus pasta is a delightful seafood dish that combines tender octopus with pasta and a flavorful sauce. It is a popular dish in Mediterranean cuisine, particularly in coastal regions where fresh seafood is abundant.
Ingredients:
- 1 pound octopus, cleaned and tentacles separated
- 1/2 pound pasta (such as spaghetti or linguine)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can diced tomatoes (14 ounces)
- 1/2 cup dry white wine
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Rinse the octopus tentacles under cold water and pat them dry. If using a whole octopus, remove the beak and innards. Cut the tentacles into bite-sized pieces.
- Fill a large pot with water and bring it to a boil. Add a pinch of salt to the boiling water and cook the octopus for about 30-40 minutes until tender. You can check the doneness by piercing the tentacles with a fork; they should be tender and not rubbery. Drain the cooked octopus and set it aside.
- In a separate pot, cook the pasta according to the package instructions until al dente. Drain the cooked pasta and set it aside.
- In a large skillet or saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and softened.
- Add the diced tomatoes to the skillet and stir well. Pour in the white wine and simmer for a few minutes to allow the alcohol to evaporate. If desired, add red pepper flakes for a bit of heat.
- Add the cooked octopus to the skillet, season with salt and pepper to taste, and simmer for another 10-15 minutes to allow the flavors to meld together.
- Toss the cooked pasta into the skillet with the octopus and sauce. Gently mix until the pasta is well coated with the sauce and heated through.
- Serve the octopus pasta hot, garnished with fresh parsley for added freshness and color.
