Stuffed Italian Frying Peppers

Stuffed Italian frying peppers are a popular dish made with sweet or mild Italian frying peppers that are filled with a savory mixture and then cooked until tender. They are commonly enjoyed as an appetizer or side dish.

Ingredients:

  • 6-8 Italian frying peppers
  • 1 cup Italian sausage, cooked and crumbled
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste
  • Olive oil, for drizzling

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Wash the Italian frying peppers and pat them dry. Slice off the tops of the peppers and remove the seeds and membranes. Leave the peppers whole.
  3. In a mixing bowl, combine the cooked Italian sausage, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  4. Stuff the mixture into each pepper, filling them to the top. Gently press the stuffing into the peppers to ensure they are tightly packed.
  5. Place the stuffed peppers on a baking sheet or in a baking dish. Drizzle olive oil over the peppers to lightly coat them.
  6. Bake the stuffed peppers in the preheated oven for about 25-30 minutes, or until the peppers are tender and the filling is heated through.
  7. Once cooked, remove the stuffed peppers from the oven and let them cool slightly before serving.
