Beef Roast Stuffed Baked Potato

Beef roast stuffed baked potatoes are a hearty and flavorful dish where tender beef roast is combined with a delicious filling and stuffed inside baked potatoes.

Ingredients:

  • 4 large baking potatoes
  • 1.5 pounds beef roast (such as chuck or sirloin)
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup sliced mushrooms
  • 1 cup shredded cheddar cheese
  • Sour cream and chives, for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and pat them dry. Prick each potato several times with a fork to allow steam to escape while baking. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  3. While the potatoes are baking, season the beef roast with salt and pepper on all sides.
  4. Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the beef roast and sear it on all sides until nicely browned. Remove the roast from the skillet and set it aside.
  5. In the same skillet, add the diced onion, minced garlic, red bell pepper, and sliced mushrooms. Sauté until the vegetables are softened and lightly browned.
  6. Preheat your oven to 350°F (175°C) after removing the baked potatoes.
  7. Slice the beef roast into thin strips or bite-sized pieces. Return the beef to the skillet with the sautéed vegetables and stir to combine. Cook for a few minutes to ensure the beef is heated through.
  8. Carefully slice each baked potato lengthwise and gently squeeze the sides to open it up. Fluff the insides with a fork.
  9. Spoon the beef and vegetable mixture into the center of each baked potato. Top with shredded cheddar cheese.
  10. Place the stuffed potatoes on a baking sheet and bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
  11. Remove the potatoes from the oven and let them cool slightly. Serve the beef roast stuffed baked potatoes with a dollop of sour cream and garnish with chives.
