Beef Roast Stuffed Baked Potato
Beef roast stuffed baked potatoes are a hearty and flavorful dish where tender beef roast is combined with a delicious filling and stuffed inside baked potatoes.
Ingredients:
- 4 large baking potatoes
- 1.5 pounds beef roast (such as chuck or sirloin)
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup sliced mushrooms
- 1 cup shredded cheddar cheese
- Sour cream and chives, for garnish
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and pat them dry. Prick each potato several times with a fork to allow steam to escape while baking. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the potatoes are tender when pierced with a fork.
- While the potatoes are baking, season the beef roast with salt and pepper on all sides.
- Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the beef roast and sear it on all sides until nicely browned. Remove the roast from the skillet and set it aside.
- In the same skillet, add the diced onion, minced garlic, red bell pepper, and sliced mushrooms. Sauté until the vegetables are softened and lightly browned.
- Preheat your oven to 350°F (175°C) after removing the baked potatoes.
- Slice the beef roast into thin strips or bite-sized pieces. Return the beef to the skillet with the sautéed vegetables and stir to combine. Cook for a few minutes to ensure the beef is heated through.
- Carefully slice each baked potato lengthwise and gently squeeze the sides to open it up. Fluff the insides with a fork.
- Spoon the beef and vegetable mixture into the center of each baked potato. Top with shredded cheddar cheese.
- Place the stuffed potatoes on a baking sheet and bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
- Remove the potatoes from the oven and let them cool slightly. Serve the beef roast stuffed baked potatoes with a dollop of sour cream and garnish with chives.
