Ingredients:

For the cake:

  • 4 large eggs, separated
  • 1/2 cup granulated sugar, divided
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon instant coffee granules (optional)
  • 1 teaspoon vanilla extract

For the filling:

  • 8 ounces mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons coffee liqueur (such as Kahlua) or strong brewed coffee
  • 1 cup heavy cream
  • Unsweetened cocoa powder, for dusting

For the soaking syrup:

  • 1/2 cup strong brewed coffee
  • 2 tablespoons coffee liqueur (optional)
  • 2 tablespoons granulated sugar

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, beat the egg yolks with 1/4 cup of granulated sugar until thick and pale yellow. Add the vanilla extract and mix until combined.
  3. In a separate clean bowl, beat the egg whites until foamy. Gradually add the remaining 1/4 cup of granulated sugar while continuing to beat until stiff peaks form.
  4. Gently fold the beaten egg whites into the egg yolk mixture until well combined.
  5. In a small bowl, whisk together the flour, cocoa powder, salt, and instant coffee granules (if using). Sift this mixture over the egg mixture and fold gently until no streaks of flour remain.
  6. Pour the batter into the prepared jelly roll pan, spreading it evenly with a spatula.
  7. Bake in the preheated oven for 12-15 minutes or until the cake springs back when lightly touched.
  8. While the cake is baking, prepare the filling. In a mixing bowl, beat the mascarpone cheese, powdered sugar, vanilla extract, and coffee liqueur (or strong brewed coffee) until smooth and creamy.
  9. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
  10. When the cake is done baking, remove it from the oven and immediately lift it out of the pan using the parchment paper overhang. Transfer the cake, still on the parchment paper, to a flat surface.
  11. While the cake is still warm, brush the surface evenly with the soaking syrup made by combining the strong brewed coffee, coffee liqueur (if using), and granulated sugar.
  12. Spread the mascarpone filling evenly over the cake, leaving a small border around the edges.
  13. Starting from one short end, carefully roll up the cake with the filling, using the parchment paper to help you roll it tightly. Place the rolled cake, seam side down, on a serving platter.
  14. Dust the top of the cake roll with unsweetened cocoa powder using a fine-mesh sieve.
  15. Refrigerate the Tiramisu Cake Roll for at least 2 hours, or until chilled and set.
  16. Before serving, you can dust the cake roll with additional cocoa powder or decorate it with chocolate curls if desired.
