- 4 large eggs, separated
- 1/2 cup granulated sugar, divided
- 1/2 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon instant coffee granules (optional)
- 1 teaspoon vanilla extract
For the filling:
- 8 ounces mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons coffee liqueur (such as Kahlua) or strong brewed coffee
- 1 cup heavy cream
- Unsweetened cocoa powder, for dusting
For the soaking syrup:
- 1/2 cup strong brewed coffee
- 2 tablespoons coffee liqueur (optional)
- 2 tablespoons granulated sugar
Instructions:
- Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, beat the egg yolks with 1/4 cup of granulated sugar until thick and pale yellow. Add the vanilla extract and mix until combined.
- In a separate clean bowl, beat the egg whites until foamy. Gradually add the remaining 1/4 cup of granulated sugar while continuing to beat until stiff peaks form.
- Gently fold the beaten egg whites into the egg yolk mixture until well combined.
- In a small bowl, whisk together the flour, cocoa powder, salt, and instant coffee granules (if using). Sift this mixture over the egg mixture and fold gently until no streaks of flour remain.
- Pour the batter into the prepared jelly roll pan, spreading it evenly with a spatula.
- Bake in the preheated oven for 12-15 minutes or until the cake springs back when lightly touched.
- While the cake is baking, prepare the filling. In a mixing bowl, beat the mascarpone cheese, powdered sugar, vanilla extract, and coffee liqueur (or strong brewed coffee) until smooth and creamy.
