Chicken Marsala

Chicken Marsala is a classic Italian dish featuring tender chicken breasts cooked in a flavorful Marsala wine sauce.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons butter, divided
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish (optional)

Instructions:

  1. Start by pounding the chicken breasts to an even thickness, about 1/2 inch. Season both sides of the chicken breasts with salt and pepper.
  2. Dredge the chicken breasts in the flour, shaking off any excess.
  3. In a large skillet, heat 2 tablespoons of butter and the olive oil over medium heat. Once the butter has melted and the oil is hot, add the chicken breasts to the skillet.
  4. Cook the chicken for about 4-5 minutes per side, or until they are browned and cooked through. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the sliced mushrooms and minced garlic. Cook for about 5 minutes, stirring occasionally, until the mushrooms have softened and browned.
  6. Pour the Marsala wine into the skillet, scraping the bottom to deglaze and release any browned bits. Let the wine simmer for a few minutes until it has reduced slightly.
  7. Add the chicken broth to the skillet and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for about 5 minutes, allowing the flavors to meld together.
  8. Stir in the heavy cream and bring the sauce back to a simmer. Cook for an additional 2-3 minutes, or until the sauce has thickened slightly.
  9. Return the chicken breasts to the skillet, nestling them into the sauce. Cook for another 2-3 minutes, allowing the chicken to heat through and absorb some of the sauce.
  10. Garnish with chopped fresh parsley, if desired.

Serve the Chicken Marsala hot, spooning the mushroom and Marsala sauce over the chicken. It pairs well with pasta, rice, or mashed potatoes, and makes for a delicious and elegant meal. Enjoy the rich flavors of this classic Italian dish!
