Egg Curry

Egg curry is a flavorful and protein-packed dish made with hard-boiled eggs cooked in a spiced curry sauce. It is a popular dish in many cuisines, including Indian and Southeast Asian.

Ingredients:

  • 6 hard-boiled eggs, peeled
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, finely chopped
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1/2 teaspoon garam masala
  • 1 cup coconut milk
  • 1 cup water (adjust as needed)
  • Salt, to taste
  • Fresh cilantro leaves, chopped (for garnish)

Instructions:

  1. Heat the vegetable oil in a large pan or skillet over medium heat. Add the chopped onion and sauté until it turns golden brown.
  2. Add the minced garlic and grated ginger to the pan and cook for another minute until they become fragrant.
  3. Add the chopped tomatoes to the pan and cook until they soften and release their juices.
  4. In a small bowl, mix together the curry powder, ground cumin, ground coriander, turmeric powder, red chili powder, and garam masala with a little water to form a paste.
  5. Add the spice paste to the pan and cook for a few minutes, stirring continuously to coat the onions, tomatoes, and spices evenly.
  6. Pour in the coconut milk and water. Stir well to combine all the ingredients and bring the mixture to a gentle simmer.
  7. Carefully add the hard-boiled eggs to the pan, ensuring they are submerged in the curry sauce. Simmer the curry on low heat for about 10-15 minutes to allow the flavors to meld together and the eggs to absorb some of the sauce.
  8. Taste the curry and adjust the seasoning with salt according to your taste.
  9. Once the eggs are heated through and the curry has thickened slightly, remove the pan from heat.
  10. Garnish the egg curry with fresh chopped cilantro leaves.

Serve the delicious egg curry with steamed rice, naan bread, or roti. It's a satisfying and comforting dish that can be enjoyed for lunch or dinner.
