Egg Curry
Egg curry is a flavorful and protein-packed dish made with hard-boiled eggs cooked in a spiced curry sauce. It is a popular dish in many cuisines, including Indian and Southeast Asian.
Ingredients:
- 6 hard-boiled eggs, peeled
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, finely chopped
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- 1/2 teaspoon garam masala
- 1 cup coconut milk
- 1 cup water (adjust as needed)
- Salt, to taste
- Fresh cilantro leaves, chopped (for garnish)
Instructions:
- Heat the vegetable oil in a large pan or skillet over medium heat. Add the chopped onion and sauté until it turns golden brown.
- Add the minced garlic and grated ginger to the pan and cook for another minute until they become fragrant.
- Add the chopped tomatoes to the pan and cook until they soften and release their juices.
- In a small bowl, mix together the curry powder, ground cumin, ground coriander, turmeric powder, red chili powder, and garam masala with a little water to form a paste.
- Add the spice paste to the pan and cook for a few minutes, stirring continuously to coat the onions, tomatoes, and spices evenly.
- Pour in the coconut milk and water. Stir well to combine all the ingredients and bring the mixture to a gentle simmer.
- Carefully add the hard-boiled eggs to the pan, ensuring they are submerged in the curry sauce. Simmer the curry on low heat for about 10-15 minutes to allow the flavors to meld together and the eggs to absorb some of the sauce.
- Taste the curry and adjust the seasoning with salt according to your taste.
- Once the eggs are heated through and the curry has thickened slightly, remove the pan from heat.
- Garnish the egg curry with fresh chopped cilantro leaves.
Serve the delicious egg curry with steamed rice, naan bread, or roti. It's a satisfying and comforting dish that can be enjoyed for lunch or dinner.
