Crispy Mango Sticky Rice

Crispy mango sticky rice is a delightful dessert that combines the sweetness of ripe mangoes with the creamy texture of sticky rice.

Ingredients:

  • 2 cups of sticky rice (also known as glutinous rice)
  • 2 cups of coconut milk
  • 1/2 cup of granulated sugar
  • 1/2 teaspoon of salt
  • 2 ripe mangoes, peeled and sliced
  • Vegetable oil for frying
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and transfer it to a steamer basket lined with cheesecloth or a clean kitchen towel. Steam the rice over medium heat for about 25-30 minutes, or until it becomes tender and fully cooked.
  3. While the rice is cooking, prepare the coconut sauce. In a saucepan, combine the coconut milk, granulated sugar, and salt. Heat the mixture over medium heat, stirring constantly until the sugar dissolves. Remove the sauce from the heat and set it aside.
  4. Once the rice is cooked, transfer it to a large mixing bowl. Pour the prepared coconut sauce over the rice and mix gently to coat the grains evenly. Allow the rice to absorb the coconut sauce for about 15-20 minutes.
  5. While the rice is resting, heat vegetable oil in a frying pan over medium-high heat.
  6. Take a handful of the sticky rice and shape it into a patty or small ball. Flatten the patty slightly to create a disc shape. Repeat with the remaining rice.
  7. Fry the rice patties in the hot oil until they turn golden brown and crispy on both sides. This should take about 2-3 minutes per side. Remove the patties from the oil and drain them on a paper towel-lined plate.
  8. To serve, place a crispy rice patty on a plate and top it with a few slices of ripe mango. You can also sprinkle some sesame seeds on top for added flavor and garnish.
  9. Repeat the process with the remaining rice patties and mango slices.
  10. Enjoy your crispy mango sticky rice while it's still warm!

This dessert is best served fresh, as the crispy texture of the rice pairs wonderfully with the sweetness of the mango.
