Homemade Red Bean Paste
Homemade red bean paste is a versatile and delicious filling used in various Asian desserts, such as red bean buns, mochi, and pastries. It is made from red adzuki beans and can be sweetened to your preferred level.
Ingredients:
- 1 cup dried red adzuki beans
- 3 cups water
- 3/4 cup granulated sugar (adjust to taste)
- Pinch of salt
Instructions:
- Rinse the dried red adzuki beans thoroughly under cold water to remove any dirt or debris.
- Place the rinsed beans in a large bowl and cover them with water. Let them soak overnight, or for at least 8 hours. This step helps to soften the beans and reduce the cooking time.
- Drain the soaked beans and transfer them to a large saucepan or pot. Add 3 cups of water to the pot.
- Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and let the beans simmer, partially covered, for about 1 to 1.5 hours. Stir occasionally and add more water if needed to prevent the beans from drying out.
- The beans are ready when they are soft and easily mashed with a spoon.
- Remove the pot from the heat and use a potato masher or the back of a spoon to mash the cooked beans into a paste-like consistency. If you prefer a smoother texture, you can use a blender or food processor to puree the beans.
- Return the pot to the stove over low heat. Add the granulated sugar and a pinch of salt to the mashed beans. Stir well to combine.
- Continue cooking the mixture over low heat, stirring constantly, until the sugar has dissolved and the red bean paste thickens to your desired consistency. This usually takes about 15-20 minutes.
- Remove the pot from the heat and let the red bean paste cool completely.
- Once cooled, the red bean paste is ready to be used as a filling for various desserts. You can store it in an airtight container in the refrigerator for up to one week.
Homemade red bean paste adds a delightful sweetness and a smooth, velvety texture to desserts. Use it as a filling for steamed buns, pancakes, or as a topping for shaved ice. Enjoy the rich and comforting flavors of this classic Asian ingredient!
