Banana Pancakes Bites

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 ripe banana, sliced
  • Maple syrup or honey for serving (optional)


  1. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together to combine the dry ingredients.
  2. In a separate bowl, beat the egg and add buttermilk (or regular milk) and melted butter. Whisk until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray or butter.
  5. Using a tablespoon or small cookie scoop, drop small portions of batter onto the skillet, leaving space between each one.
  6. Place a banana slice onto each pancake bite, pressing it gently into the batter.
  7. Cook for about 2-3 minutes, or until the edges start to set and small bubbles appear on the surface.
  8. Flip the pancake bites using a spatula and cook for an additional 2-3 minutes, or until golden brown and cooked through.
  9. Remove from the skillet and repeat the process with the remaining batter and banana slices.
  10. Serve the banana pancake bites warm with maple syrup or honey drizzled on top, if desired.
