Banana Pancakes Bites

- 1/2 teaspoon baking soda

Instructions:

- In a separate bowl, beat the egg and add buttermilk (or regular milk) and melted butter. Whisk until well combined.

- Place a banana slice onto each pancake bite, pressing it gently into the batter.
- Cook for about 2-3 minutes, or until the edges start to set and small bubbles appear on the surface.
- Flip the pancake bites using a spatula and cook for an additional 2-3 minutes, or until golden brown and cooked through.
- Remove from the skillet and repeat the process with the remaining batter and banana slices.
- Serve the banana pancake bites warm with maple syrup or honey drizzled on top, if desired.
