Steak Florentine with a King Cut T-bone Steak

A Steak Florentine with a King Cut T-bone steak is a classic and delicious dish.
Ingredients:
- 1 King Cut T-bone steak (about 1 1/2 to 2 inches thick)
- Salt
- Black pepper
- Olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 cups fresh spinach leaves
- Lemon wedges, for serving
Instructions:
- Preheat your grill or stovetop to high heat.
- Season the King Cut T-bone steak generously with salt and black pepper on both sides. Drizzle a little olive oil over the steak to help with browning.
- Place the seasoned steak on the preheated grill or skillet. Cook for about 4-6 minutes per side for medium-rare doneness, or adjust the cooking time based on your preferred level of doneness.
- While the steak is cooking, prepare the Florentine topping. In a separate skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the fresh spinach leaves to the skillet and cook until wilted, stirring occasionally. This should take about 2-3 minutes. Season with a pinch of salt and pepper to taste.
- Once the steak is cooked to your desired level of doneness, remove it from the grill or skillet and let it rest for a few minutes.
- Transfer the rested steak to a cutting board and slice it off the bone, keeping the tenderloin and strip steak portions separate.
- Serve the sliced King Cut T-bone steak on a platter, with the tenderloin and strip steak portions separated. Top the steak with the sautéed spinach Florentine mixture.
- Garnish with lemon wedges for squeezing over the steak.
- Serve the Steak Florentine with a side of your choice, such as roasted potatoes or a fresh green salad.
