Korean Spicy Stir-fried Pork

Korean Spicy Stir-fried Pork, also known as "Dwaeji Bulgogi" or "Jeyuk Bokkeum," is a popular Korean dish that features thinly sliced pork marinated in a spicy sauce and stir-fried with vegetables.

Ingredients:

  • 500 grams pork belly or pork loin, thinly sliced
  • 2 tablespoons gochujang (Korean red chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or sugar
  • 2 tablespoons rice wine (mirin) or dry white wine
  • 2 teaspoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 4-5 green onions, cut into 2-inch pieces
  • Sesame seeds for garnish

Instructions:

  1. In a bowl, combine the gochujang, soy sauce, honey (or sugar), rice wine, sesame oil, minced garlic, and grated ginger. Mix well to form a smooth marinade.
  2. Add the sliced pork to the marinade and toss until the pork is evenly coated. Let it marinate for at least 30 minutes to allow the flavors to meld.
  3. Heat vegetable oil in a large pan or wok over medium-high heat.
  4. Add the marinated pork and stir-fry for 3-4 minutes until the pork is cooked and slightly caramelized.
  5. Add the sliced onion, julienned carrot, and bell pepper to the pan. Continue stir-frying for another 2-3 minutes until the vegetables are tender-crisp.
  6. Add the green onions and stir-fry for an additional minute.
  7. Sprinkle sesame seeds on top for garnish.
  8. Serve the Korean Spicy Stir-fried Pork hot with steamed rice or wrap it in lettuce leaves for a lettuce wrap (ssam) style.
