Mango Kheer

Mango kheer is a delightful and creamy dessert made with ripe mangoes, milk, sugar, and flavored with cardamom and saffron. It is a popular Indian sweet dish that is perfect for the mango season.

Ingredients:

  • 2 ripe mangoes, peeled and pureed
  • 4 cups milk
  • 1/2 cup basmati rice, washed and soaked for 30 minutes
  • 1/2 cup sugar (adjust according to your taste)
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands
  • Chopped nuts (almonds, pistachios) for garnish

Instructions:

  1. In a heavy-bottomed saucepan, bring the milk to a boil over medium heat. Stir occasionally to prevent the milk from scorching.
  2. Drain the soaked rice and add it to the boiling milk. Reduce the heat to low and simmer until the rice is cooked and the milk thickens, stirring occasionally. This will take about 30-40 minutes.
  3. Once the rice is cooked and the kheer has thickened, add the sugar and mix well until it dissolves.
  4. Add the mango puree to the kheer and stir to combine. Cook for an additional 2-3 minutes.
  5. Add the cardamom powder and saffron strands to the kheer. Stir well to incorporate the flavors.
  6. Remove the kheer from heat and let it cool to room temperature.
  7. Once cooled, transfer the mango kheer to serving bowls or glasses.
  8. Garnish with chopped nuts like almonds and pistachios.
  9. Chill the kheer in the refrigerator for a few hours or serve it immediately.
  10. Enjoy the creamy and luscious mango kheer as a refreshing dessert.
