Turtle Cheesecake

Turtle cheesecake is a decadent dessert that combines the rich and creamy texture of cheesecake with the delicious flavors of caramel, chocolate, and pecans.
Ingredients:
For the crust:
- 1 ½ cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons granulated sugar
For the filling:
- 24 ounces (680g) cream cheese, softened
- 1 cup granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
For the toppings:
- 1 cup caramel sauce
- 1 cup chopped pecans
- 1/2 cup chocolate chips, melted
Instructions:
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
- In a bowl, combine the graham cracker crumbs, melted butter, and granulated sugar for the crust. Mix until the crumbs are evenly coated.
- Press the crust mixture into the bottom of the greased springform pan, creating an even layer. Use the back of a spoon or the bottom of a glass to press it down firmly.
- In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Pour the cream cheese filling over the crust in the springform pan.
- Bake the cheesecake in the preheated oven for 45-50 minutes or until the center is set and the edges are slightly golden. The center should still have a slight jiggle.
- Remove the cheesecake from the oven and let it cool for about 10 minutes. Then run a knife around the edge of the pan to loosen the cheesecake.
- Allow the cheesecake to cool completely before refrigerating it for at least 4 hours or overnight.
- Once the cheesecake is chilled and firm, remove it from the springform pan and place it on a serving plate.
- Drizzle the caramel sauce over the top of the cheesecake, allowing it to drip down the sides.
- Sprinkle the chopped pecans over the caramel sauce.
- Melt the chocolate chips in the microwave or using a double boiler. Drizzle the melted chocolate over the pecans.
- Place the cheesecake back in the refrigerator for about 15-20 minutes to allow the caramel and chocolate to set.
Slice and serve the turtle cheesecake, and enjoy the indulgent combination of creamy cheesecake, caramel, pecans, and chocolate. It's a perfect dessert for special occasions or whenever you're craving a sweet treat!
