Turtle Cheesecake

Turtle cheesecake is a decadent dessert that combines the rich and creamy texture of cheesecake with the delicious flavors of caramel, chocolate, and pecans.

Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons granulated sugar

For the filling:

  • 24 ounces (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract

For the toppings:

  • 1 cup caramel sauce
  • 1 cup chopped pecans
  • 1/2 cup chocolate chips, melted

Instructions:

  1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. In a bowl, combine the graham cracker crumbs, melted butter, and granulated sugar for the crust. Mix until the crumbs are evenly coated.
  3. Press the crust mixture into the bottom of the greased springform pan, creating an even layer. Use the back of a spoon or the bottom of a glass to press it down firmly.
  4. In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy.
  5. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  6. Pour the cream cheese filling over the crust in the springform pan.
  7. Bake the cheesecake in the preheated oven for 45-50 minutes or until the center is set and the edges are slightly golden. The center should still have a slight jiggle.
  8. Remove the cheesecake from the oven and let it cool for about 10 minutes. Then run a knife around the edge of the pan to loosen the cheesecake.
  9. Allow the cheesecake to cool completely before refrigerating it for at least 4 hours or overnight.
  10. Once the cheesecake is chilled and firm, remove it from the springform pan and place it on a serving plate.
  11. Drizzle the caramel sauce over the top of the cheesecake, allowing it to drip down the sides.
  12. Sprinkle the chopped pecans over the caramel sauce.
  13. Melt the chocolate chips in the microwave or using a double boiler. Drizzle the melted chocolate over the pecans.
  14. Place the cheesecake back in the refrigerator for about 15-20 minutes to allow the caramel and chocolate to set.
