Ingredients:

  • 1 large ripe mango
  • Mochi wrappers (available at Asian grocery stores or online)
  • Your choice of mango or vanilla ice cream
  • Cornstarch or potato starch (for dusting)

Instructions:

  1. Prepare the mango:
    • Peel the mango and remove the flesh from the pit.
    • Cut the mango flesh into small cubes or puree it until smooth. Set aside.
  2. Shape the ice cream:
    • Take small scoops of mango or vanilla ice cream and roll them into balls, about 1 to 1.5 inches in diameter. You can use an ice cream scoop or a spoon to portion the ice cream.
    • Place the ice cream balls on a baking sheet lined with parchment paper or a silicone mat.
    • Put the baking sheet with the ice cream balls into the freezer and let them firm up for at least 1 hour.
  3. Assemble the mango mochi ice cream:
    • Take a mochi wrapper and place it on a clean, dry surface. Dust the wrapper with a little cornstarch or potato starch to prevent sticking.
    • Place a small spoonful of the mango puree or a few cubes of mango in the center of the wrapper.
    • Take one ice cream ball from the freezer and place it on top of the mango in the wrapper.
    • Fold the edges of the wrapper over the ice cream and pinch them together, sealing the mochi around the ice cream. Twist and gently squeeze the mochi to seal it completely.
    • Repeat this process for the remaining ice cream balls and mochi wrappers.
  4. Serve:
    • Once all the mango mochi ice cream is assembled, place them back in the freezer for at least 2 hours or until they are firm.
    • When ready to serve, remove the mango mochi ice cream from the freezer and let them sit at room temperature for a few minutes to soften slightly.
    • Enjoy the mango mochi ice cream as a delightful and refreshing treat!

Note: If you prefer a smoother texture, you can blend the mango cubes with a little water or mango juice before using them as a filling.
