Pineapple Tarts
Pineapple tarts are a popular and delicious treat, especially during festive occasions like Chinese New Year. These bite-sized pastries consist of a buttery and crumbly pastry shell filled with sweet pineapple jam.
Ingredients:
For the pineapple jam:
- 2 cups fresh pineapple, finely chopped
- 1/2 cup granulated sugar
- 1 cinnamon stick (optional)
For the pastry:
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
For assembly:
- 1 egg, beaten (for egg wash)
- Additional granulated sugar (for sprinkling)
Instructions:
- Prepare the pineapple jam:
- In a saucepan, combine the chopped pineapple, granulated sugar, and cinnamon stick (if using).
- Cook the mixture over low heat, stirring occasionally, until the pineapple becomes thick and jam-like. This can take approximately 1 to 1 1/2 hours. Remove the cinnamon stick and let the jam cool completely.
- Prepare the pastry:
- In a mixing bowl, sift the all-purpose flour and salt together.
- In a separate bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the egg yolks and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the flour mixture to the butter mixture, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for about 30 minutes to firm up.
- Assemble the pineapple tarts:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Take a small portion of the pastry dough and roll it into a ball (about 1 tablespoon in size).
- Flatten the ball into a small disc and place a teaspoon of pineapple jam in the center.
- Fold the edges of the dough over the jam, sealing it completely. Roll it gently between your palms to form a smooth ball.
- Place the filled tart onto the prepared baking sheet. Repeat this process with the remaining dough and pineapple jam, spacing the tarts apart on the baking sheet.
- Using a fork, gently press down on the tops of the tarts to create a crisscross pattern.
- Brush the tops of the tarts with beaten egg wash and sprinkle some granulated sugar on each tart.
- Bake the pineapple tarts:
- Place the baking sheet in the preheated oven and bake for approximately 15-18 minutes, or until the tarts turn golden brown.
- Remove the tarts from the oven and let them cool on a wire rack.
Once cooled, the pineapple tarts are ready to be enjoyed. These delightful treats can be stored in an airtight container for several days. Pineapple tarts make a wonderful gift or a sweet treat for family and friends during festive occasions. Enjoy the buttery pastry and tangy pineapple filling!
