Moka Cake
INGREDIENTS
- 90g (3/4 cup) of flour
- 5g (1/2 tsp) of baking powder
- 20g (2 tbsp) of cocoa powder
Instant coffee
- 4 egg yolks
- 60g (1/4 cup) of sugar
- 1/4 tsp of salt
- 70ml (1/4 cup) of milk
- 60ml (1/4 cup) of olive oil
- 1 tsp of vanilla extract
- 4 egg whites
- 60g (1/2 cup) powdered sugar
- 1 tsp of vinegar
- Milk
- 100ml (1/2 cup) of whipping cream
- 60g (1/3 cup) of dark chocolate
- 1 tsp of instant coffee
- 300ml (1 1/4 cups) of whipping cream
- 60g (1/2 cup) of powdered sugar
- A pinch of salt
METHOD
1. In a bowl mix together egg yolks with sugar, add in oil and coffee milk, and sift in flour, cocoa powder, and baking powder.
2. Beat egg whites with vinegar and sugar, and gently add to the first mixture.
3. Transfer to the baking pan and bake at 180°C/360°F for 25 minutes.
4. In another bowl mix together hot whipping cream with chocolate and coffee, let it cool and refrigerate for 1 hour, then beat together with sugar powder and the rest of the whipping cream. Top the cake with the prepared mixture, and sprinkle with cocoa powder
