Upside Down Orange Cake
INGREDIENTS
- 2 lemons
- 2 grapefruit
- 2 oranges
For the caramel:
- 60g (1/4 cup) sugar
- 30g (2 1/2 tbsp) brown sugar
- 40g (2 1/2 tbsp) butter
- 20ml (1 tbsp) water
For the dough:
- 200g (1 2/3 cups) flour
- 2 1/2 tbsp cornstarch
- 3g (1/2 tsp) baking powder
- 150ml (3/5 cup) milk
- 130ml (1/2 cup) olive oil
- 100g (1/2 cup) sugar
- 100ml (2/5 cup) orange juice
- 1 tsp vanilla extract
- 1/2 tsp cinnamon powder
METHOD
1. Cut all fruits into slices and then into squares.
2. In a small saucepan add sugar, brown sugar, butter, and water.
3. In a bowl mix together milk, olive oil, sugar, orange juice, vanilla extract, flour, baking powder, and cinnamon powder.
4. Pour the caramel into the baking pan, top with fruit, and the prepared dough mixture.
5. Bake at 170°C/350°F for 35 minutes.
