Zucchini Rolls


  • 130ml (1/2 cup) of extra virgin olive oil
  • 1 clove of garlic
  • Parsley
  • Basil
  • Rosemary
  • Pepper
  • Salt
  • 4 zucchini
  • 260g of roasted chicken
  • 300g of cheese
  • Breadcrumbs
  • Parmesan


1. In a small bowl add the extra virgin olive oil, salt, pepper, garlic, basil, rosemary, and parsley, and mix.

2. Cut the zucchini lengthwise and brush them with the seasoned oil.

3. Transfer the seasoned zucchini slices to the pan and cook them on both sides until they are soft.

4. Transfer the zucchini slices to the cutting board and arrange the piece of roasted chicken and a slice of cheese. Roll each one.

5. Pour a drizzle of olive oil into the baking dish and sprinkle with breadcrumbs. Arrange the rolls and add the cheese cubes on top.

6. Sprinkle the rolls with parmesan and breadcrumbs and add a drizzle of olive oil.

7. Transfer to the oven and bake at 190°C/375°F for 15 minutes, or until they are golden brown.
