Salmon Mini Cheesecake
INGREDIENTS
- 200g smoked salmon
- 8 rusks
- 60g (1/4 cup) melted butter
- ½ shallot
- Salt
- Pepper
- Chives
- 100g (1/2 cup) mascarpone
- 100g (2/5 cup) cream cheese
- 120g (1/2 cup) ricotta
- 1 tsp olive oil
METHOD
1. Crush the biscuits, add butter, and mix very well.
2. Place inside a circular mold. Press down well.
3. Mix Cream Cheese, Mascarpone, Ricotta, Shallot, Chives, and Olive Oil in a bowl and pour on the crushed biscuits.
4. Cut the salmon into thin strips and roll to form a rose.
5. Place on top of the cream cheese.
