Ingredients:
Fresh Salmon Filets
- 5-6 medium Yukon gold potatoes
- 1 cup milk
- 1 cup cream
- 5-6 oz butter
- 1/4 cup roasted garlic
- 3-4 tbsp chopped basil
- salt to taste
- 1 cup quartered cherry tomatoes
- 1/4 cup diced red onion
- 2-3 tbsp chopped herbs (fennel tops, parsley, or basil work great)
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt to taste
