Milk Focaccia With Ham and Cheese

INGREDIENTS

  • 220ml (3/4cup + 1 tbsp) lukewarm water
  • 220ml (¾ cup + 1 tbsp) lukewarm milk
  • 170 ml (½ cup + 2 tbsp) vegetable oil
  • 15g (2 tbsp) fresh yeast
  • 5g (1 tbsp) sugar
  • 420g (2 ½ cups) all-purpose flour
  • 170 g (1 cup) bread flour
  • 8g (1 tbsp) salt
  • 8 pieces brie
  • 8 pieces salami
  • Egg wash
  • Sesame seeds

METHOD

1. In a large bowl whisk together milk, vegetable oil, sugar, and fresh yeast.

2. Separately whisk both types of flour with salt. Add dry ingredients into the liquids and mix to combine. When the dough comes together, cover and let it rest for 20 minutes.

3. Knead the risen dough and form it into a ball. Cover with plastic and let it rise for 5/6 hours, or until doubled in size.

4. Brush a 26-28 cm baking pan with vegetable oil. Spread out the dough to cover the bottom of the pan, make 8 slits, and put pieces of salami or brie into each one. Brush the focaccia with egg wash and decorate with sesame seeds.

5. Bake for 30 minutes at 190°C/375°F.
