Stuffed Zucchini with Tuna
INGREDIENTS
- 3 zucchini
- 3 slices of sandwich bread + water
- 130g of tuna in oil
- 1 egg
- 3 anchovies in oil
- Pepper
- Salt
- Breadcrumbs
- Extra virgin olive oil
METHOD
1. Add the zucchini to the pot full of water and boil them for 5 minutes. Remove from the heat.
2. Break sandwich bread with your hands and pour the water over. Drain from the water and set aside.
3. Cut the zucchini in half lengthwise and remove the middle part. Cut the middle part on the small pieces.
4. In a bowl add the tuna in oil (drained), zucchini, egg, prepared bread, anchoves, pepper and salt and mix all with spatula.
5. Transfer the zucchini to the baking tray and fill with the prepared filling. Sprinkle with breadcrumbs and add a drizzle of olive oil.
6. Transfer the zucchini to the oven and bake at 190°C/374°F for 20 minutes. Serve on a plate and enjoy.
