Healthy Kadhi Pakoda

BAJRA KADHI PAKODA- Celebrating the International Year of Millets, here is my favourite recipe - Pakora and Kadhi with Bajra.

Ingredients

For Kadhi

  • 1 cup Curd, beaten, рджрд╣реА
  • 2 cups Water, рдкрд╛рдиреА
  • Salt to taste, рдирдордХрд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • ┬╜ tsp Sugar, рдЪреАрдиреА
  • ┬╜ tsp Turmeric powder, рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░
  • A pinch of Asafoetida, рд╣реАрдВрдЧ
  • A pinch of degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • 1 tbsp Bajra flour, рдмрд╛рдЬрд░реЗ рдХрд╛ рдЖрдЯрд╛
  • 2 ┬╜ tbsp Ghee, рдШреА
  • Fried Pakora, рддрд▓реЗ рд╣реБрдП рдкрдХреМрдбрд╝реЗ
  • ┬╝ cup Water, рдкрд╛рдиреА
  • ┬╜ tbsp Ghee, рдШреА

For Roasting Flour

  • 1 cup Bajra flour, рдмрд╛рдЬрд░реЗ рдХрд╛ рдЖрдЯрд╛
  • For Pakoda
  • 3 medium Onions, sliced, рдкреНрдпрд╛рдЬ
  • ┬╝ cup Carom leaves, roughly torn, рдЕрдЬрд╡рд╛рдЗрди рдХреЗ рдкрддреНрддреЗ
  • 3 tbsp Curd, beaten, рджрд╣реА
  • ┬╜ inch Ginger (peeled & grated) рдЕрджрд░рдХ
  • Salt to taste, рдирдордХрд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • ┬╜ tsp Turmeric powder, рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░
  • ┬╝ tsp Asafoetida, рд╣реАрдВрдЧ
  • ┬╜ tsp Degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • ┬╜ tsp Fennel seeds, рд╕реМрдВрдл
  • ┬╜ cup Roasted Bajra flour, рдмрд╛рдЬрд░реЗ рдХрд╛ рдЖрдЯрд╛
  • 2 tbsp Curd, beaten, рджрд╣реА

Other Ingredients

  • Oil for frying, рддреЗрд▓ рддрд▓рдиреЗ рдХреЗ рд▓рд┐рдП

For Jowar Popcorn

  • ┬╜ tsp Oil, рддреЗрд▓
  • 2-3 tbsp Jowar, рдЬреНрд╡рд╛рд░

For Garnish

  • Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

Process

For Kadhi

  1. In a bowl, add curd, water, salt to taste, sugar, turmeric powder, asafoetida, degi red chili powder, bajra flour, ghee and mix it well.
  2. Transfer the mixture in a saucepan or kadai and cook it for 15-18 minutes or until thick at low flame.
  3. Add fried pakora, water and give a quick boil on medium flame.
  4. Finish it with some ghee and transfer it to a serving bowl.
  5. Garnish it with coriander sprig and serve hot with steam rice.

For Roasting Flour

  1. In a pan, add bajra flour and roast it for 4-5 minutes on medium flame.
  2. Transfer it to a tray and keep it aside for further use.

For Pakoda

  1. In a bowl, add onions, carom leaves, curd, ginger, salt to taste, turmeric powder, asafoetida, degi red chili powder, fennel seeds, bajra flour and mix it well.
  2. In a kadai, heat oil, take lemon size mixture and drop it into hot oil.
  3. Fry it for 4-5 minutes until half cooked and transfer it to an absorbent sheet.
  4. Refry the pakoda for 2-3 minutes until golden brown and crispy.
  5. Transfer it to an absorbent paper and keep it aside for further use.

For Jowar Popcorn

  1. In a pan, heat oil, add jowar and cover it with the lid.
  2. let it puff for 3-4 minutes on medium flame.
  3. Transfer it to a bowl and keep it aside for further use.
