Potato and Zucchini Cake


  • 1 zucchini
  • 3 potatoes
  • 4 eggs
  • Salt
  • Rosemary
  • Pepper
  • 30g (2 1/4 tbsp) of extra virgin olive oil
  • 20g (2 1/2 tbsp) of all-purpose flour
  • 80g of cooked ham
  • 100g of cheese


1. Grate the zucchini and potatoes and transfer to the mix. Mix with hands and squeeze to remove the excess of water.

2. Add the eggs, salt, rosemary, pepper, oil, flour and mix all to combine well together.

3. Add a drizzle of olive oil on the baking dish (26cm - baking dish size) and spread the half of the mixture.

4. Arrange the cooked ham and cheese slices and spread the other half of the mixture. Level it up well.

5. Add a drizzle of olive oil and transfer the cake to the oven. Bake at 180°C/360°F for 30 minutes.

6. Cut on slices after baking and serve.
