Halwai Style Homemade Suji Barfi
Halwai-style homemade Suji Barfi is a delectable Indian sweet made with semolina (suji or rava), ghee (clarified butter), sugar, and flavored with cardamom. It's a popular treat often served during festivals, celebrations, or just as a delightful dessert.
Here's a simple recipe to make Suji Barfi at home:
Ingredients:
- 1 cup fine semolina (suji/rava)
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 1 cup milk
- 1/2 teaspoon cardamom powder
- A few saffron strands (optional)
- Chopped nuts (almonds, pistachios) for garnishing
Instructions:
- In a heavy-bottomed pan, heat the ghee over medium-low heat. Add the semolina and roast it, stirring continuously to avoid lumps, until it turns golden brown and you can smell a nutty aroma. This process will take around 7-10 minutes.
- While roasting the semolina, you can heat the milk separately (either on the stovetop or in the microwave) until it is warm.
- Once the semolina is roasted, lower the heat and slowly add the warm milk to it, stirring constantly to prevent any lumps from forming.
- Add the sugar to the mixture and continue to stir until the sugar dissolves completely.
- Add the cardamom powder and saffron strands (if using), and mix well. The mixture will start to thicken as it cooks.
- Keep stirring the mixture continuously over low heat until it thickens further and starts to leave the sides of the pan. This should take around 8-10 minutes.
- Grease a plate or a flat tray with some ghee. Pour the cooked Suji Barfi mixture onto the greased plate and spread it evenly with a spatula.
- While the mixture is still warm, garnish the top with chopped nuts, pressing them lightly into the barfi.
- Allow the Suji Barfi to cool down and set completely at room temperature. You can also refrigerate it for a short while to speed up the setting process.
- Once the barfi has set, cut it into squares or diamond shapes using a sharp knife.
