Ingredients
Waffle Cookies:
- ½ cup unsalted butter, softened (113g)
- ¾ cup granulated sugar (150g)
- 3 Tablespoons light brown sugar, firmly packed (38g)
- 1 large egg, room temperature preferred
- ¾ teaspoon vanilla extract
- 1 ¾ cups all-purpose flour (218g)
- 1 Tablespoon cornstarch
- 1 teaspoon baking powder
- ⅛ teaspoon baking soda
- ½ teaspoon table salt
Maple Glaze (see note):
- ⅓ cup maple syrup (80ml)
- 3 Tablespoons salted butter, melted (or use unsalted and add a pinch of salt after melting) (42g)
- 1 cup powdered sugar (125g)
