Ingredients

Waffle Cookies:

  • ½ cup unsalted butter, softened (113g)
  • ¾ cup granulated sugar (150g)
  • 3 Tablespoons light brown sugar, firmly packed (38g)
  • 1 large egg, room temperature preferred
  • ¾ teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour (218g)
  • 1 Tablespoon cornstarch
  • 1 teaspoon baking powder
  • ⅛ teaspoon baking soda
  • ½ teaspoon table salt

Maple Glaze (see note):

  • ⅓ cup maple syrup (80ml)
  • 3 Tablespoons salted butter, melted (or use unsalted and add a pinch of salt after melting) (42g)
  • 1 cup powdered sugar (125g)
