Ice Cream Cookies
INGREDIENTS
- 120g of strawberry jam
- 160g of strawberry syrup
- 70g (1 cup) of coconut flour
- 200ml (1 cup) + 700ml (3 cups) of liquid cream
- 90g (1/2 cup) of chocolate sprinkles
- Chocolate biscuits
METHOD
1. In a small bowl add the strawberry jam and strawberry syrup and mix to combine.
2. In a bowl add the coconut flour and liquid cream and mix to combine.
3. In a mixing bowl pour the liquid cream and mix with the electric mixer. Add the coconut flour/liquid cream and strawberry jam/syrup and mix to combine. Finally, add the chocolate sprinkles and mix to incorporate.
4. Arrange the chocolate biscuits on the cake tray with the rectangle mold and spread the cream on top. Close it with another layer of the chocolate cookies. Transfer to the freezer for at least 6 hours.
5. After time has elapsed cut the ice cream cookies and serve them on a serving plate.
