Mabo Nasu Spicy Eggplant Stir Fry

Ingredients

  • 4 Eggplant
  • 2tbsp Oil
  • 180g Minced meat
  • A: 3tbsp Chopped green onions
  • A: 1tsp Grated garlic
  • A: 1tsp Grated ginger
  • 1tbsp Chili Bean Sauce
  • B: 2tbsp Sake (Japanese rice wine)
  • B: 140ml Water
  • B: 2tbsp Soy sauce
  • B: 1tsp Chicken soup stock granules
  • 1.5tbsp Potato starch
  • 3tbsp Water

Mix the potato starch with water and set it aside. Before using, mix it well again.

【Directions】

①Heat oil in a frying pan and stir-fry the roughly cut eggplant. Cook both sides until the eggplant becomes tender, then transfer it to a plate or tray.

②In the same frying pan, stir-fry the minced meat. Once the color changes, add ingredients A and stir-fry thoroughly until aromatic.

③Add Chili Bean Sauce and continue to stir-fry. Then add ingredients B and simmer for 2-3 minutes.Meat provides a rich and flavorful broth.

If the mixture becomes dry, you can add 1-2 tablespoons of water.

④Return the eggplant to the pan and quickly stir-fry it together with the meat.

⑤Thicken the sauce by adding a water-dissolved potato starch.

Finally, add a touch of sesame oil for extra flavor. Your dish is ready to be served!
