Veggie Fritters


  • 1 zucchini
  • 2 potatoes
  • 1 carrot
  • 1 spring onion
  • 120g of cheese
  • 1 clove of garlic
  • 2 eggs
  • Salt
  • Pepper
  • 30g (2 1/2 tbsp) of semolina
  • Oil for frying


1. Grate the zucchini, potatoes, and carrot.

2. In a mixing bowl with grated zucchini add the grated potato and carrot. Add the spring onion, cheese, garlic, and eggs, and season with salt and pepper. Mix them all together.

3. Add the semolina and mix it all. Cover with cling film and set aside for 20 minutes.

4. After time has elapsed make the fritters and transfer them to the pan with hot oil. Fry them until they are golden brown on both sides.
