Cod Piccata
Today we're making cod piccata. This is an easy and healthy summer or really any time of the year fish dish that anyone can make. We hope you enjoy it!
INGREDIENTS WITH GRAM AMOUNTS
- 1.5 pounds (680g) cod
- 3 tablespoons (21g) capers - rinsed
- 2 large lemons - 8 slices and the rest cut into wedges
- 3 tablespoons (really, grams?) Italian flat-leaf parsley - minced
- 4 cloves garlic - sliced
- ¾ cup flour - will not need all of it
- 1 cup (240g) low-sodium chicken stock
- 3 ounces (90g) dry white wine
- 5 tablespoons (70g) butter - cubed, divided
- ¼ cup (54g) olive oil
- 1 teaspoon kosher salt
- ¼ teaspoon pepper
