Egg Malai Curry

Ingredients

For Gravy

  • 2 tbsp Ghee, рдШреА
  • 2-3 tbsp Oil, рддреЗрд▓
  • 7-8 no. Garlic cloves, roughly chopped, рд▓рд╣рд╕реБрди
  • 1 inch Ginger (peeled & sliced) рдЕрджрд░рдХ
  • 1 no. Bay leaf, рддреЗрдЬрдкрддреНрддрд╛
  • ┬╝ inch Cinnamon stick, рджрд╛рд▓рдЪреАрдиреА
  • 5-6 small White onion, sliced, рд╕рдлреЗрдж рдкреНрдпрд╛рдЬ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 2 cups Curd, beaten, рджрд╣реА
  • 8-10 no. Cashew Nuts, blanched, рдХрд╛рдЬреВ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 1 ┬╜ cups Water, рдкрд╛рдиреА
  • 1 cup Water, рдкрд╛рдиреА
  • 1 no. Green chili, slit into middle, рд╣рд░реА рдорд┐рд░реНрдЪ
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • ┬╜ tsp Sugar, рдЪреАрдиреА

For Masala

  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 2 no. Black cardamom, рдмрдбрд╝реА рдЗрд▓рд╛рдпрдЪреА
  • 2 tbsp Black peppercorns, рдХрд╛рд▓реА рдорд┐рд░реНрдЪ рдХреЗ рджрд╛рдиреЗ
  • 1 tbsp Dry fenugreek leaves, рдХрд╕реВрд░реА рдореЗрдереА

For Sauteing Eggs

  • 1 tbsp Ghee, рдШреА
  • 1 tbsp Oil, рддреЗрд▓
  • 1 ┬╜ tsp Caraway seeds, рд╢рд╛рд╣реА рдЬреАрд░рд╛
  • 7-8 no. Eggs (hard boiled) рдЙрдмрд▓реЗ рд╣реБрдП рдЕрдВрдбреЗ
  • ┬╜ tsp Degi red chili powder, рджреЗрдЧреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░
  • Salt to taste, рдирдордХ рд╕реНрд╡рд╛рджрдЕрдиреБрд╕рд╛рд░
  • 1 tbsp Tender coriander stems, chopped, рдзрдирд┐рдпрд╛ рдХреЗ рдбрдВрдард▓

For Garnish

  • Prepared Masala, рддреИрдпрд╛рд░ рдХрд┐рдпрд╛ рд╣реБрдЖ рдорд╕рд╛рд▓рд╛
  • Chili oil, рдорд┐рд░реНрдЪ рдХрд╛ рддреЗрд▓
  • Fresh cream (for finishing) рддрд╛рдЬрд╝рд╛ рдорд▓рд╛рдИ
  • Coriander sprig, рдзрдирд┐рдпрд╛ рдкрддреНрддрд╛

Process

For Gravy

  1. In a handi, heat ghee, oil, add garlic, ginger and saute it for 2-3 minutes on medium flame.
  2. Add bay leaf, cinnamon stick, onion, salt to taste and cook it for 5-6 until translucent on medium flame.
  3. Add curd and cook it well for a while.
  4. Add cashew nuts, salt to taste, water and let it simmer, grind it into smooth paste with the help of a hand blender.
  5. strain the gravy, add water, green chili, salt to taste, sugar and let it simmer until thick.
  6. Transfer it to a serving dish or bowl and place prepared sauteed eggs.
  7. Garnish it with prepared masala, chili oil, fresh cream and coriander sprig.
  8. Serve hot with roti.

For Masala

  1. In a pan, add salt to taste, black cardamom, black peppercorns, dry fenugreek leaves and dry roast for 2-3 minutes on medium flame.
  2. Transfer it to a mixer grinder jar and grind it into fine powder.
  3. Keep it aside for further use.

For Sauteing Eggs

  1. In the same pan, heat ghee, oil, add caraway seeds and let it splutter.
  2. Add boiled eggs and saute it for a minute.
  3. Add degi red chili powder, salt to taste, tender coriander stems and toss well.
  4. Keep it aside for further use.
