Zucchini Rolls


  • 600g of zucchini
  • Extra virgin olive oil
  • Salt
  • Pepper
  • Breadcrumbs
  • Parsley
  • Parmesan
  • Cheese
  • Baked ham


1. Wash the zucchini, peel them, and cut them into slices with the help of a mandolin.

2. Prepare the ingredients for the breading by pouring the extra virgin olive oil into a bowl and adding a pinch of salt and pepper. In the second bowl add the breadcrumbs and add chopped parsley and parmesan.

3. Dip the zucchini slices first in the flavored oil and then in the breadcrumbs, covering them well.

4. Stuff the breaded zucchini slices with strips of cooked ham and slices of cheese. Roll them up.

5. Pour a drizzle of olive oil into a baking dish and arrange the rolls vertically, tightly packed close to each other so as not to lose their shape during cooking.

6. Drizzle them with another drizzle of oil and transfer them to the oven. Bake at 180°C/360°F for 25 minutes.
