Grated Belle Peppers

INGREDIENTS

  • Bell peppers
  • 120g of bread
  • 50g (1/2 cup) of parmesan
  • Parsley
  • Capers
  • 12 cherry tomatoes
  • Basil
  • Pepper
  • Salt
  • Extra virgin olive oil

METHOD

1. Arrange the peppers (yellow and red) on the pan covered with parchment paper. Transfer to the oven and bake at 190°C/374°F for 30 minutes.

2. When the peppers are baked transfer them to the dish and cover them with the cling film. Set aside for 15 minutes. After 15 minutes peel them and set aside.

3. Add the bread to the food processor and mix to obtain breadcrumbs. Transfer to the bowl.

4. In a bowl with bread add the parmesan, parsley, capers, cherry tomatoes, basil, pepper, and salt and mix all together.

5. Arrange the peppers on the baking pan covered with parchment paper and cover with the bread mixture.

6. Add a drizzle of olive oil on the peppers and transfer to the oven. Bake at 190°C/374°F for 20 minutes.
