Lemon Fluffy Cake
INGREDIENTS
- 3 eggs
- 150g (3/4 cup) of sugar
- 125g (1/2 cup) of yogurt
- 1 lemon (zest)
- 100g (1/2 cup) of butter
- 70ml (1/4 cup) of lemon (juice)
- Vanilla extract
- 20ml (1 1/2 tbsp) of limoncello
- 280g (2 1/4 cups) of flour
- 16g (1 tbsp) of baking powder
- 30g (1/4 cup) of cornstarch
- Powdered sugar
METHOD
1. In a mixing bowl add the eggs and sugar and mix with an electric mixer until the sugar dissolves. Add the yogurt, lemon (zest), butter, lemon (juice), vanilla extract, and limoncello and continue mixing.
2. Sift the flour, baking powder, and cornstarch and continue mixing until the mixture are smooth and no lumps.
3. Pour the mixture into the cake mold (20cm mold size) and transfer it to the oven. Bake at 180°C/360°F for 40 minutes.
4. Serve the cake on a plate and decorate it with powdered sugar.
