Zucchini Focaccias

INGREDIENTS

  • 170g of zucchini (grated)
  • 320g (2 1/2 cups) of all-purpose flour
  • 220g (1 cup) of cream cheese
  • 16g of baking powder
  • Salt
  • 7ml (1 1/2 tsp) of extra virgin olive oil
  • Cheese
  • Baked ham
  • Salad

METHOD

1. Grate the zucchini and remove the excess water.

2. In a mixing bowl add the flour, cream cheese, yeast, salt, extra virgin olive oil, and grated zucchini. Start mixing with a spatula and when the dough starts to form knead it with your hands to obtain the compact dough.

2. Transfer the dough to the working surface and roll it out. Make the circles with the mold.

3. Transfer the dough circles to the pan and cover with the lid. Cook for 5 minutes on each side.

4. Cut the focaccias in half and arrange the piece of cheese and baked ham. Transfer them to the pan and cover with a lid to let the cheese melt. Cook for 2 minutes.

5. Add the salad as a final layer and transfer them to the serving plate.
