Ricotta Pie with Chocolate Chips

INGREDIENTS
For the crust:
- 310g (2 1/2 cups) of all-purpose flour
- 2 eggs
- 90ml (1/2 cup) of vegetable oil
- 110g (1/2 cup) of sugar
- 8g (3/4 tbsp) of baking powder
- 15g (1 tbsp) of vanilla sugar
For the filling:
- 770g (3 1/2 cups) of ricotta
- 190g (1 cup) of sugar
- 110g of chocolate chips
- Milk for brushing
- Sugar grains
METHOD
1. In a mixing bowl add the flour, eggs, vegetable oil, sugar, baking powder, and vanilla sugar and mix with a spatula. When the dough starts to form knead it with your hands to obtain a smooth dough.
2. Cut 1/4 of the dough to reserve for later. Roll out the other part on the parchment paper and cut it with the pizza cutter to obtain the round shape. Transfer to the baking mold (28cm mold size).
3. To prepare the filling for the pie mix the ricotta, sugar, and chocolate chips with a spatula.
4. Pour the filling into the baking mold with the crust. Make the strips from the reserved dough and arrange them on top of the pie. Remove the excess and close the pie edges.
5. Brush the crust with milk and sprinkle the edges with the sugar grains. Transfer the pie to the oven and bake at 180°C/360°F for 35 minutes.
6. Cut the pie into slices after baking and serve.
