Vegan Mabo Dofu

Hey Foodies! This Vegan Mabo Dofu is made with silky-smooth cubes of tofu enrobed in a savory-sweet sauce! A milder version of the Chinese original still packs a ton of umami, perfect on bed of steamed rice!

Ingredients:

  • 400g silken tofu

Sauce:

  • 1 tbsp chili bean paste
  • 1 tbsp miso paste
  • 1 tbsp low sodium soy sauce
  • 2 tbsp brown rice vinegar
  • 1 tbsp brown sugar
  • 1 cup mushroom stock
  • black pepper / sichuan peppercorns
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch

Other ingredients:

  • 2 tbsp coconut oil
  • 1 tbsp ginger
  • 5 cloves garlic
  • 100g brown shimeji mushroom
  • 200g shiitake mushrooms
  • 1 tbsp scallion (white part)
  • 1 stalk green onion
