Eggplant Skewers


  • 2 eggplants
  • Salt
  • 150g (1 1/4 cups) of breadcrumbs
  • 70g (1/2 cup) of flour
  • Paprika
  • Dry rosemary
  • Salt
  • Pepper
  • Oil for frying


1. Cut the eggplants lengthwise and season with salt. Cover with a kitchen towel and set aside for 30 minutes to lose the excess water.

2. After time has elapsed divide them into two strips and place them on a skewer giving passing the skewer several times.

3. In a bowl add the breadcrumbs, flour, paprika, dry rosemary, salt, and pepper and mix. Coat well the eggplant skewers.

4. Transfer them to the pan with hot oil and fry until they are golden brown.

5. Serve them with a bowl of mayonnaise on the side.
